Quick Dinners

So I've been absent again for a number of reasons, most importantly that I just haven't had the inspiration to whip up something worthy of a blog post.  Looking back at the last, I realize that there were a number of things like the Velvety Beet Cupcakes and the "Best Pancakes" recipe that, I have decided, is so overrated.

I have however found a quick dinner recipe that I was able to throw together in a matter of 20 minutes and it was oh-so-tasty!

I had been craving spaghetti all putanesca and we had cod in the fridge.  So I went to my trusty epicurious iPhone app to see just what I could combine to satisfy my tastebuds and use what I had in my fridge.

Salt Cod with Tomatoes and Capers:  Epicurious BaccalĂ  alla Vesuviana sparked a thought that I could probably make our tummies and pockets happy.

So I swiftly chopped and combined garlic, onions, anchovies, capers, olives, and hot pepper together and slipped in the cod to simmer while the spaghettini boiled.

Resting the cod on a bed of the fresh spaghettini and covering with the delicious sauce... delightful!

Do not think, for one second, that you can't whip up something amazing in 20 minutes.  It just takes a bit of inspiration (alla epicurious, cookbook, or favorite recipe card) and a love for something yum!
